Chocolate Ice Cream (Cashew Based)
This ice cream is dairy-free, but you would never guess it.
Yield: ~8 servings (of 1+ scoop each)
Ingredients
1.75 cups cashews
3.5 cups water, plus more for soaking
32-40 dates
6 tbsp unsweetened cocoa powder
1/4 tsp cinnamon (I omitted)
Instructions
1. Soak cashews in water for 6 hours or overnight.
2. Rinse cashews. Blend with fresh water.
3. Add dates, cocoa, and cinnamon. Blend.
4. Pour into ice cream maker. Enjoy!

Notes: Texture is good right after churning (becomes solid after freezing). Needs to be sweeter/better flavor. Not as good as other chocolate ice cream recipe.

2.66 tbsp cocoa powder
8 dates
1 tsp vanilla
Instructions
1. Soak cashews in milk.
2. Blend ingredients.
3. Pour into ice cream maker. Enjoy!

Notes: I increased the milk from 1 cup, because it was needed to blend smooth. Also increased the cocoa from 2 tbsp for more cocoa flavor.
