Chocolate Truffles (Liquid Center Version)

Yield: 18 truffles

 

Center Filling Ingredients 

1/4 avocado

1/4 cup full-fat coconut milk

2 tbsp cocoa powder

6 dates

Nut Filling

18 hazelnuts

Chocolate Coating (approximate quantities)

1.5 oz unsweetened chocolate

6-9 dates

2 tbsp milk

 

Instructions:

1. Process Filling Ingredients Until Smooth. Freeze in ice cube tray with hazelnut in center.

2. Temper chocolate for chocolate coating. Add mashed dates and milk.

3. Dip chocolate balls into chocolate coating. Refrigerate until ready to serve.

Center Filling Ingredients

1/4 avocado

1 oz unsweetened chocolate

6 dates (I only used 4. It wasn't sweet enough, but they were the less sweet variety of dates)

4 tsp milk

1/8 tsp vanilla

Nut Filling

54 hazelnuts (10 whole and 44 crushed)

Chocolate Coating

3/4 oz unsweetened chocolate

3-4.5 dates

1 tbsp milk

 

Instructions:

1. Process filling ingredients until smooth. Shape around whole hazelnut.

2. Roll into crushed hazelnuts

3. Temper chocolate for coating. Dip balls into coating.

4. Refrigerate until serving.

 

Nutrition Information (1 truffle)

117 calories, 8.1g fat, 10.3g carbs, 2.5g fiber, 7.1g sugar, 2.3g protein
