Chocolate Zucchini Bread

This chocolate loaf cake is full of veggies, but you would never guess it.

Yield: 6-8 muffins

 

Ingredients

1/2 cup flour

1/4 cup unsweetened cocoa powder

1 cup grated zucchini

1 egg

12 dates (Or a tad bit less. It was pretty sweet.)

2 tbsp applesauce

1.5 tsp vanilla

3/4 tsp baking soda

1/8 tsp salt

 

Instructions

1. Preheat oven to 350 degrees.

2. Add wet ingredients to dry ingredients.

3. Fold in grated zucchini.

4. Bake 30-40 minutes.

Notes: The original recipe was for brownies, but it tasted like cake. I used 2 mini loaf pans.
