The Goji berries really shine through in these energy bites.
Ingredients (Cocoa with Goji Berries Flavor)
15 medjool dates (I used 40 deglet noor dates)
1/2 cup raisins
1/2 cup pecans
1/2 cup sunflower seeds
1/4 cup goji berries
1/4 cup cocoa powder
1/4 cup almond butter
2 tbsp chia seeds
2 tbsp flax seeds
1 tsp vanilla extract (I didn't use)
Another Flavor (I didn't try this one yet)
1/2 cup cashew butter
1/2 cup shredded coconut
1/2 cup sunflower seeds
1/2 cup raw cashews
1/2 cup golden raisins
1/4 cup coconut flower
2 tbsp flax seeds
2 tbsp sesame seeds
2 tbsp dates (add more if it is not sweet enough)
Instructions
1. Place all ingredients except sunflower seeds into food processor. Pulse until combined but chunky.
2. Stir in sunflower seeds
3. Line casserole dish with parchment and press firmly into even layer
4. Refrigerate for at least 8 hours. Slice
