Cider Beans

This bean recipe is cooked in sweet apple cider.

Ingredients

1 pound Great Northern beans

2 carrots (I used 1 cup)

1 onion (I used 2 cups)

1/3 cup tomato paste

3 tbsp molasses

1.5 tsp Dijon mustard

2 tbsp apple cider vinegar

1.5 cups apple cider (I used apple juice)

1 tsp kosher salt

1/4 tsp black pepper

2 tsp fresh thyme

4 garlic cloves

1.5 cups cooking liquid

 

Instructions

1. Soak beans overnight.

2. Simmer beans in saucepan for 1.5 hours, or until cooked.

3. Sweat down onion and carrots. Add garlic. Cook 2 minutes.

4. Whisk tomato paste, molasses, mustard, and apple cider vinegar in bowl. Add salt, pepper, and thyme. Pour into onion mixture.

5. Add beans with 1.5 cups cooking liquid.

6. Simmer 30-45 minutes.

Notes: Very sweet. i also used 2 tbsp date water though. Next time, potentially cut down the apple juice or molasses (or increase the tomato paste).

 

Notes 2: Suprisingly, you can really taste the apple juice. These are pretty sweet, which is why I left out the extra sweetner called for in the original recipe.
