Cinnamon Raisin Bread

If you like cinnamon raisin bread, give this simple recipe a try.

Yield: 16 mini muffins

 

Ingredients

2.5 cups flour

2 tbsp cinnamon

1 tbsp baking powder

1/4 tsp salt

1 egg

1 cup applesauce

1 cup dates

2/3 cup milk

2 tbsp oil

1 cup walnuts

1/2 cup raisins

 

Instructions

1.Preheat oven to 350 degrees.

2. Add wet to dry. Stir in 1/2 cup walnuts and raisins. Sprinkle remaining walnuts on top.

3. Pour batter into 9 x 5 inch loaf pan. Bake 55-60 minutes


Notes: No when warm. Yes when cold. I baked them 25 minutes in mini muffin pan. Maybe it wasn't long enough? The walnuts started to brown on the outside, but it was still a bit mushy inside. They also have a strange aftertaste. It isn't really like a sandwich bread--more like a muffin consistency.
