Cinnamon Raisin Cookie Quinoa Bake
Dates and banana provide natural sweetness to this breakfast dish.
Yield: 2 servings
Ingredients
1/4 cup quinoa cooked in 1/2 cup water
1/2 banana, mashed
1.5 dates, mashed
1 egg
1 tbsp milk
1/4 tsp vanilla
1/12 tsp cinnamon
2 tbsp raisins
Instructions
1. Combine ingredients.
2. Bake 20-25 minutes at 375 degrees.

Note: Almost has a cookie-like flavor. Raisins are essential. Original recipe also called for 2 tbsp walnuts, but they did not add much to the recipe.
