Citrus Rice

The citrus flavor really shines through in this rice.

Ingredients

1.5 cups rice

2 cups broth

1 cup orange juice (I also used 1 tbsp finely grated orange zest)

2 tbsp low sodium soy sauce

1/2 cup green onions (approximately 2 scallions)

4 tbsp almond slices

 

Instructions

1. Cook rice in broth, orange juice, and soy sauce.

2. Add green onions and almonds before serving

 

Notes: Yes. Strong yummy orange flavor. I only used half the soy sauce (full sodium), which I couldn't taste.
