Citrus Tilapia

Orange juice is reduced to form a sweet glaze for this fish.

Ingredients

1 pound tilapia

2 tbsp flour

1/2 cup orange juice

2 tbsp lemon juice

1/2 tsp ground ginger

salt and pepper

 

Instructions

1. Combine flour, salt, and pepper. Lightly coat tilapia.

2. Cook fish in skillet 2-3 minutes per side. Set aside. (Be sure that the skillet is non-stick!)

3. Add orange juice, lemon juice, and ginger. Simmer 1-2 minutes or until thickened. Add lemon zest. Return fish to skillet. Cook 1-2 more minutes.
