Collard Green Veggie Wraps

Collard greens replace tortillas in this delicious vegetarian wrap.

Ingredients

1 collard green

~2 tbsp hummus

1/4 avocado (optional)

1 shredded carrot

celery stalk

jicama

red bell pepper

cucumber (approx 1/4 cup)

tomato (approx 1/4 cup)

1/4 cup beans

mushrooms (optional)

salsa (optional)

 

Instructions

1. Place collard green so that dark green side is facing down.

2. Add filling ingredients.

3. Wrap and enjoy!
