Frittata

This frittata is great for serving a crowd or one.

Yield: 1 serving

 

Ingredients

1/4 cup onions

2 3/8 oz mushrooms (1 cup)

3/4 cup tomatoes

1.5 cups fresh spinach

2 eggs

 

Instructions

1. Preheat oven to 350 degrees

2. Saute onions, mushrooms, and tomatoes. Season. Add spinach to wilt.

3. Pour into greased casserole dish. (Mine was 7 inches x 5.5 inches)

4. Bake 20-25 minutes.
