Chipotle Chicken
This is a copycat recipe for Chipotle Chicken
Ingredients
1/4 red onion, diced (recipe called for yellow onion)
1.5 cloves garlic
juice of 1/2 lime
1.5 tsp chili powder
2 chipotle peppers in adobo
1 tbsp olive oil
1/2 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp salt (I reduced from original recipe)
1/2 tsp black pepper
1/4 cup chicken broth (or water)
3 chicken thighs or 2 chicken breasts (I used 1 pound chicken)
Instructions
1. Blend all marinade ingredients in blender.
2. Refrigerate marinade and chicken for 1-4 hours.
3. Grill chicken. Then cut into pieces.
