Moroccan Chicken

You'll love this flavorful chicken recipe.

Ingredients

Spice Rub

1.5 tbsp Ras El Hanout

1.5 tsp cinnamon

1 tsp paprika

1 tsp ground ginger

1/2-1 tsp black pepper

Other Ingredients

3.5 pounds chicken

1 onion

4 garlic cloves

1 oz fresh cilantro (I omitted)

1 lemon, thinly sliced

3/4 cup olives

1/4 cup raisins

1/4 cup dried apricots

3 tbsp tomato paste

1.5 cups chicken broth

toasted slivered almonds, optional

 

Instructions

1. Combine spice rub. Season chicken. Set aside 40-45 minutes if you have the time, or refrigerate 2 hours or overnight.

2. Sear chicken on each side.

3. Lower heat. Add onions, garlic, and cilantro. Cover and cook 3 minutes.

4. Add lemon slices, olives, raisins, and dried apricots. 

5. In a bowl, mix tomato paste and chicken broth. Pour on top of the chicken as it cooks.

6. Bring to a simmer. Cover and cook 30-45 minutes until cooked through.

7. Garnish with more fresh cilantro and toasted almond slivers (optional).

Notes: Do not leave out the lemon. It makes this dish.
