Grilled Thai Mango Chicken

Enjoy this thai mango chicken!

Ingredients

4 boneless skinless chicken breasts or 4-6 boneless chicken thighs

1.5 cups diced fresh mango

1 cup coconut milk (light is okay)

1.5 tsp salt (or to taste)

1 tbsp red curry paste

1 tbsp curry powder

1.5 tsp garlic powder

1 tsp cumin

1 tsp chili powder

juice of 1 lime (about 1 tbsp)

Instructions

1. Blend mangos, coconut milk, salt, curry paste, curry powder, garlic powder, cumin, chili powder, and lime juice.

2. Marinade chicken 1-8 hours (or overnight). 

3. Grill.

4. Bring reserved sauce to a boil and serve on top.

Notes: Original recipe called for oil in marinade but I left it out.
