Savory Breakfast Bowl with Hummus
You'll love the special stars of this breakfast bowl.
Ingredients
1 sweet potato
1 onion
1 cup mushrooms (optional)
1/3 pound fresh tomatoes
8 oz fresh spinach
sunny side up eggs
hummus
Instructions
1. Cut sweet potato into cubes. Bake at 425 degrees for 25 minutes.
2. Saute onion. Add mushrooms and tomatoes. Cook. Add spinach.
3. Service sweet potatoes and greens with sunny side up eggs and hummus.
Inspired by Minimalist Baker (Simple But Good Breakfast Bowl)
Notes: At first I wasn't sure if the hummus and sweet potato went together (and I thought this recipe would be great with either/or). But as I ate more, I fell in love with this. Great addition of hummus at breakfast time!
