Sweet Potato Apple Breakfast Bake

You'll enjoy this sweet take on breakfast.

Ingredients

1 large sweet potato, shredded

1 large apple, shredded

1/8-1/4 tsp sea salt

1 tsp cinnamon

1/4 tsp nutmeg (or less)

2 eggs

1/2 cup full fat coconut milk

1/4 cup raisins

1/4 cup pecans (optional)

 

Instructions

1. Preheat oven to 400 degrees.

2. Cook shredded potatoes in skillet until they soften and brown. (Use large skillet even for half the recipe.) Add shredded apples, salt, and spices. Cook 5 minutes.

3. Whisk eggs and coconut milk. Add to skillet. Stir in raisins. Sprinkle pecans on top.

4. Bake 10 minutes in skillet pan or until eggs are set. Enjoy!
