Oil Free Mayonaisse with a Secret Ingredient

This mayonaisse uses cauliflower!

Yield: about 15 tbsp

Ingredients

1 cup cauliflower

1/2 cup cashews, soaked overnight

1/4 cup water or milk

1 tbsp lemon juice

2 tsp apple cider or rice vinegar

1/2 tsp Dijon mustard

1/4-1/2 tsp maple syrup (optional)

sea salt

Instructions

1. Blend until smooth. Adjust lemon juice, vinegar, mustard, and salt to taste.

2. Store in the fridge and use within 1 week.

Note: Tastes exactly like mayonaisse on its own but doesn't add much flavor to chicken salad. Experiment by increasing the lemon juice and Dijon or by adding spices, like garlic powder or dill.
