Cranberry Balsamic Roasted Chicken

This chicken recipe has a delicious, tart cranberry flavor.

Ingredients

Marinade

1/3 cup cranberries

2 tbsp olive oil

2 tbsp soy sauce

2 tbsp maple syrup (I subbed with dates)

1/4 cup balsamic vinegar

1/4 tsp sea salt

1/4 tsp black pepper

2 garlic cloves

Other Ingredients

2.5 pounds chicken

thyme

1/3 cup fresh cranberries

 

Instructions

1. Blend marinade ingredients. Add chicken. Cover and place in fridge 30 minutes or upto 24 hours.

2. Preheat oven to 375 degrees.

3. Put chicken in pan. Add fresh cranberries and thyme on top. 

4. Bake 35-45 minutes. (Mine needed 45 minutes but was a bit dry)
