Coconut Cauliflower Curry

This cauliflower curry is cauliflower and has a ton of flavor.

Ingredients

1 yellow onion

1 pound sweet potato (4 cups chopped)

1 head cauliflower (5 cups chopped)

1 tsp kosher salt, divided

2 tbsp curry powder

1 tbsp garam masala

1 tsp cumin

1/4 tsp cayenne

28 oz canned diced tomatoes

15 oz full fat coconut milk

15 oz can chickpeas

4 cups fresh spinach

Instructions

1. Saute onion for 2 minutes.

2. Add sweet potato. Saute 3 minutes.

3. Add cauliflower and half salt. Saute 5 minutes.

4. Add remaining spices. Add diced tomatoes and coconut milk.

5. Bring to a boil and simmer covered 10 minutes until potatoes and cauliflower are tender.

6. Add chickpeas and spinach. Stir until spinach is wilted. Add the other half of salt, to taste, if needed.
