Vegan Ricotta

This vegan ricotta is super simple to make.

Ingredients

10 oz firm tofu

1 tbsp lemon juice (or less)

2 tbsp nutritional yeast (or less)

1 tsp salt

 

Instructions

1. Mash tofu with fork. Combine with remaining ingredients.

2. Enjoy!

Notes: I recommend using approximately 1/2 cup ricotta and 5 tbsp tomato sauce per 2 oz dry pasta.
