Instant Pot Minestrone Soup
If you like minestrone soup, you will like this recipe.
Ingredients
1 onion
3 garlic cloves
2 carrots
2 celery stalk
1.5 tsp dried basil
1 tsp dried oregano
1/2 tsp fennel seed
6 cups chicken broth
28 oz diced tomatoes
1.5 cups cooked kidney beans
1 zucchini
1 bay leaf
1 bunch kale
2 tsp red wine vinegar
Instructions
1. Set Instant Pot to high saute setting. Add onion, garlic, carrots, and celery. Cook until tender.
2. Stir in basil, oregano, and fennel seed. Cook until fragrant.
3. Stir in stock, diced tomatoes, beans, zucchini, and bay leaf. Select manual setting and set time for 3-4 minutes in pressure. Use quick release method.
4. Stir in kale. Add red wine vinegar, salt, and pepper to taste.
Notes: The recipe originally said to cook under pressure for 5 minutes, but I think that was too long. I really like the red wine vinegar in this.
