Creamed Onions

 

Ingredients

1 pound pearl onions

1 cup milk

2 tbsp + 2 tsp beef broth

1 tbsp oil

4 tsp flour

2/3 tsp lemon juice

1/3 tsp salt

1/3 tsp fresh thyme

1/12 tsp pepper

 

Instructions

1. Preheat oven to 400 degrees. Toss onions with 1/12 tsp salt. Roast until soft (45 minutes - 1 hour). Remove from oven. Add broth. Roast 10 minutes more.

2. Put 1 tbsp oil in saucepan. Add flour and cook 30 seconds. Whisk in milk. Add thyme, salt, and pepper. Bring to a boil. Simmer, whisking, until thickens (5 minutes). Stir in onions and lemon juice.
