Crispy Potato, Mushroom, and Onion Cake

The thyme and garlic are delcious in the mushroom/onion mixture, and the potato cake gets nice and crispy.

Ingredients

3 russet potatoes (~1 pound)

1 onion (~1 cup)

4 oz mushrooms

2 cloves garlic

1 tsp fresh thyme

salt, pepper

 

Instructions

1. Shred potatoes. Spread on plate and microwave 5 minutes.

2. Heat oil in cast iron skillet. Add onions and mushrooms. Add garlic and thyme. Season to taste with salt and pepper.

3. Add half of potatoes. Season. Brown on first slide. Flip. Repeat with other half of potatoes.

4. Serve mushroom/onion mixture inside of two crispy potato cakes.

Notes: The potatoes become stuck together in the same shape you microwave them in. The thyme and garlic are delicious in the mushroom/onion mixture.
