Cucumber Gazpacho

Give this refreshing cold soup a try!

Ingredients

3 cucumbers, peeled

3 slices bread

1/2 cup warm water

3 cloves garlic (I didn't use)

3 scallions, white parts only

1/4 cup white wine or sherry vinegar

1 tsp lemon juice

1/4 cup slivered almonds

1/2 tsp salt

3 tbsp olive oil

 

Instructions

1. Set aside 1 cup cucumber for garnish.

2. Soak bread 2 minutes or until soft.

3. Blend bread, cucumber, garlic, scallions, vinegar, lemon juice, almonds, salt, and olive oil in food processor. 

4. Top each bowl with 1/4 cup cucumber, 1 tbsp scallions, and 1 tsp almonds.
