Date Caramel

 

Ingredients

1/3 cup dates

1/3 cup milk

1/2 tsp vanilla

pinch salt

 

Instructions

1. Blend ingredients.

2. Pour into saucepan. Cook 5-10 minutes until reduced down to ~1/3 cup.

 

Inspired by Top with Cinnamon

 

Notes: I tried using this as a caramel filling for chocolate. However, it was too icy when frozen and liquidy when refrigerated. Flavor was good. Next time, try reducing the amount of milk. 1 date and 2 tsp of milk was enough caramel for 2-3 truffles.
