Edamame Hummus

This hummus recipe is lemony and delicious.

Ingredients

1.5 cups edamame

2 tbsp tahini

4-6 tbsp water

1 tsp lemon zest (I omitted)

juice of 1 lemon (approx 1/4 cup, start with less than this amount)

1 clove of garlic (You can't taste it)

salt and pepper

2 tsp olive oil

 

Instructions

1. Blend ingredients together. Enjoy!

Notes: I also tried a recipe from Oh My Veggies which used 1 cup cooked edamame, 1/4 cup tahini, 1/4 cup water, 2 tbsp lemon juice, 1 garlic clove, 2 tbsp olive oil, and 1/4 tsp salt. I liked this recipe better. The other recipe had mostly  tahini flavor.
