Egg and Avocado Salad

Mashed avocado replaces mayonnaise in this healthier take on egg salad.

Servings: ~6 servings

 

Ingredients

6 hard boiled eggs

1 celery rib

1 avocado

1/4 cup sundried tomatoes

1 tsp Dijon mustard

pinch paprika

salt and pepper, to taste

 

Instructions

1. Place eggs in saucepan with cold water (1 inch above eggs). Bring to a boil. Cover, remove from heat, at let stand ~12 minutes.

2. Rinse under icy cold water.

3. Combine ingredients. Enjoy!

Notes: I did not taste the celery. Either try using more celery or cutting them bigger.
