Egg, Spinach, and Sundried Tomato Wrap

This wrap is inspired by a delcious wrap served at Starbucks.

Yield: 1 wrap

 

Ingredients

1 tortilla or collard green

2 eggs

7-9g (or 1 tbsp) sundried tomatoes

2 tbsp feta (do not reduce)

1-1.5 tbsp cream cheese (optional)

2 cups fresh spinach (or 1/2-1 cup frozen)

fresh tomatoes (optional)

 

Instructions

1. Scramble eggs

2. Spread wrap or collard green with cream cheese. Top with spinach and sundried tomatoes. Then feta and eggs. Roll up and enjoy!
