Eggs in Tomato Sauce

If you like roasted tomatoes, you will love this dish. The trick is cooking the egg perfectly, so that the yolk is still runny in the middle. (You may need to experiment with your oven.)

Ingredients

marinara sauce (1/2 cup for 1 egg or 3/4 cup for 2 eggs)

1-2 eggs

2 tbsp Parmesan (optional- I did not use)

fresh basil (optional- I did not use)

 

Instructions

1. Bring marinara sauce to a simmer. Add basil.

2. Break egg in. Season with salt and pepper.

3. Cover and cook 3-4 minutes.

4. Sprinkle with Parmesan cheese.

Notes: I did not cover it because I was afraid the yolk wouldn't be runny.
