Fajitas
If you like fajitas, give this recipe a try.
Yield: 8-12 servings
Ingredients
2 pounds skirt steak (or hanger or sirloin flap)
1/2 cup soy sauce
1/2 cup lime juice
1/2 cup oil
1/4 cup dates
3 cloves garlic
1 tbsp chili powder
2 tsp cumin seed
2 tsp black pepper
1 each red/yellow/green bell pepper (~2 cups each)
~6 cups onion
Instructions
1. Marinade beef 3-10 hours. Toss peppers and onions with some of reserved marinade.
2. Grill beef. Cook to medium. Pull off grill at 125-130 degrees to reach 135 degrees after resting.
3. Cook veggies.
4. Serve with guacamole and Pico de Gallo.

Notes: Yes. It isn't fab, but it is pretty good. I also reduced the excess meat marinade and poured it on top.

1 each red/green pepper
2 limes, juiced
1/4 cup oil
2 tsp chili powder
1 tsp cumin
1 tsp salt
1 tsp pepper
1 tsp paprika
1 tsp oregano
1/2 tsp garlic powder
1/2 tsp onion powder
1/2-1 tsp red pepper flakes
Instructions
1. Marinade steak for 1-3 hours. Grill beef.
2. Saute onions and peppers. Enjoy!
