Fish with Tomatoes, Olives, and Capers

Olives and capers round out this fish dish.

Ingredients

4 servings white fish

1 small onion

1/2 cup white wine

1 cup diced tomatoes with juice (I used fresh)

1/2 cup chopped black olives

2 tbsp capers

1/4 tsp crushed red pepper (opt)

2 cups fresh spinach

 

Instructions

1. Cook fish. Set aside.

2. Saute onion. Add wine and reduce by half. Add tomatoes, olives, capers, and crushed red pepper. Cook 3 minutes. Stir in spinach. Season with salt and pepper.

3. Spoon sauce over fish. Enjoy!

Notes: Not good with salad. Only serve on fish. It made 8 servings for me.
