Fried Rice

The trick to fried rice is using rice that has been previously cooked. Older rice is dryer, improving the texture of the final dish. Rice that is 2 or 3 days old is preferable, but 1 day old rice is also fine. In a pinch, you can spread freshly cooked rice on a baking sheet to allow the moisture to escape and throw it in the freezer to cool it off.

Yield: 4-6 servings

 

Ingredients

3 cups cooked rice

1 onion

2 cups frozen vegetables (or more)

2 tbsp soy sauce

up to 3 eggs

4 scallions

 

Instructions

1. Saute onion in wok (or large saute pan).

2. Add frozen vegetables. Cook until defrosted. Add rice.

3. Add soy sauce.

4. Form well in pan. Cook eggs (if serving the day of).

5. Add scallions.
