Fruited Rice Pilaf
The apricots add a nice sweet, citrusy burst to this rice.
Ingredients
1.5 cups dry brown rice
1/4 slivered almonds
1/2 cup green onion
1/2 cup raisins
1/2 cup dried apricots
1/4 tsp black pepper
1/4 tsp salt
Instructions
1. Cook rice with salt and pepper.
2. Stir in remaining ingredients.
Inspired by Guiding Stars
Notes: I particularly liked the apricots, although this isn't as good as the citrus rice.
