Fudge

This chocolate fudge recipe needs a bit of work, but is a great starting point for future experimentation.

Yield: 4 large servings (16 serving suggestions)

 

Ingredients

1 oz unsweetened chocolate

1 tbsp coconut oil

11 dates (Use less next time. This was way too sweet.)

4 tsp coconut milk

1/3 tsp vanilla

4 tsp cocoa powder

 

Instructions

1. Melt chocolate and coconut oil on double broiler.

2. Blend dates, coconut milk, and chocolate mixture.

3. Add vanilla and coco powder.

4. Chill.

40 calories, 2g fat, 5.5g carbs, 0.8g fiber, 4.5g sugar, 0.5g protein

Note: In between fudge and frost consistency. Super sweet. Use fewer dates next time.

1/4 cup low fat coconut milk

1/2 cup almond butter

18 dates

1/8 tsp mint extract (recipe called for 1/4 tsp, but I think this was too much)

1/2 cup cocoa powder

1/8 tsp sea salt

6 tbsp melted coconut butter

 

Instructions

1. Blend ingredients.

2. Freeze
