Ful Medames

This version of ful medames is made with easier to find edamame. And the spices are absolutely amazing!

Ingredients

15 oz frozen shelled edamame (about 3 cups), thawed

1 large onion

1 large zucchini

2 tbsp minced garlic

2 tsp cumin

1 tsp coriander

1/8 tsp cayenne pepper

28 oz can diced-tomatoes

1/4 cup fresh cilantro or mint (I used mint)

3 tbsp lemon juice

 

Instructions

1. Cook edamame until tender. (I steamed a 8 oz package in the bag in the microwave for 3 minutes, but that wasn't long enough.)

2. Saute onion. Add zucchini. Cook. Add garlic, cumin, coriander, and cayenne. Cook until fragrant (30 seconds). Stir in tomatoes. Bring to a boil. Reduce heat and cook until slightly reduced (~5 minutes).

3. Stir in edamame. Cook until heated through (~2 minutes). Remove from heat. Stir in cilantro (or mint) and lemon juice.
