Greek Quinoa with Tomatoes, Cucumber, and Mint

The mint adds a freshness to this dish.

Ingredients

1 cup uncooked quinoa

2 cups tomato

2 cups cucumber

1-2 cups red onion (not called for in original recipe, but feel free to use if you have it on hand)

1.5 cups cooked chickpeas

3 tbsp fresh mint

1 tbsp fresh oregano (I omitted)

Dressing (Do not omit or reduce dressing)

1/3 cup olive oil

2 tbsp red wine vinegar

1.5 tsp shallots

1/4 tsp kosher salt

1/4 tsp black pepper

Topping

2 oz feta cheese (This is not a lot. Can double if you want)

4 lemon wedges

 

Instructions

1. Cook quinoa. Let cool.

2. Combine dressing ingredients.

3. Toss ingredients together. Enjoy!

Notes: I doubled the cucumber and tomato from the original recipe because I like more cucumber and tomato in mine.
