This salad is a delicious addition to any mediterrean meal.

Yield: ~4 servings

 

Ingredients

Salad

2 medium tomatoes

1.5 cups cucumber

1 cup diced green pepper (I omitted because I didn't have any)

1/3 cup red onion

1/4 cup pitted Kalamata olives (tastes good even without these)

1/2 cup feta (I omitted because I am trying to avoid cheese)

Dressing (This is a generous amount of dressing, but it tastes good)

3 tbsp olive oil

1 tbsp lemon juice

1 tbsp red wine vinegar

1 tsp dried oregano

1/4 tsp salt

 

Instructions

1. Mix dressing ingredients. Pour over salad.
