Green Bean Casserole with Creamy Parsnip Puree
Enjoy this healthier take on green bean casserole.
Yield: approximately 6 servings
Ingredients
1 onion
1.2 cups parsnips
10 oz mushrooms
3 cloves garlic
2.4 tbsp nutritional yeast
1 lb green beans
Instructions
1. Saute onions until carmelized. Remove.
2. Steam parsnips in microwave for ~4 minutes.
3. Steam green beans in microwave from ~2 minutes.
4. Saute mushrooms and garlic (onions should now be removed from plan).
5. Place green beans in baking dish. Spread half of mushroom mixture on top.
6. Puree other half of mushrooms, steamed parsnips, 1 cup water, 0.9 tsp sea salt, and 2.4 tbsp nutritional yeast.
7. Top with carmelized onions.
8. Bake at 350 degrees for 30 minutes.
