Green Beans and Summer Vegetables
This green bean dish is studded with onion, zucchini, and cherry tomatoes.
Servings: 5-6
Ingredients
1 onion
1/4 tsp oregano
1 tbsp broth
1/2 pound green beans
1 zucchini
1 cup cherry tomatoes
1/8 tsp salt
1/8 tsp pepper
Instructions
1. Saute onion and oregano.
2. Add zucchini and tomatoes. Cook until tender. Remove from heat.
3. Add broth to deglaze pan. Add green beans. Cover and simmer 10-15 minutes, turning once or twice.
4. Return reserved veggies. Season with salt and pepper. Enjoy!

Notes: I reduced the oregano, because it was too strong. I also cut the quantity of green beans in half, because I wanted a higher proportion of the other vegetables.
Notes: Can also try adding mushrooms and corn.
Notes 3: This is a simple summer saute. The carmelized onions taste really good.
