Green Tomato and Corn Salsa

This is the perfect recipe for your green tomatoes left at the end of summer

Ingredients

4/3 ear corn (or more)

1/2 pound green tomato (approximately 1.5 cups)

1 tsp lime juice

4 tsp rice vinegar

1 jalapeno (approximately 4 tsp)

1/2-3/4 cup red onion (opt)

cilantro (opt)

pinch salt

pinch pepper

 

Instructions

1. Combine all ingredients and enjoy.

 

Notes: I wouldn't call this a signature dish, but it is a good way to use green tomatoes.
