Grilled Corn Cakes
These corn cakes are crispy and delicious. The method of preparation brings out the sweetness from the corn, and it is hard to believe that these are made with only a few simple ingredients.
Yield: Approx 4 pancakes
Ingredients
2 cups corn
1/2 cup breadcrumbs
1/3 cup chives (opt)
1/2 tsp salt (I didn't use all of this)
1/4 tsp pepper
Instructions
1. Pulse corn in food processor. Place in bowl. Add bread crumbs, chives, salt, and pepper. Form into disks. Refrigerate 30 minutes.
2. Bake at 425 degrees for 15-20 minutes. Flip. Bake another 10 minutes.
