Hashbrowns

Customize this breakfast staple with one of two spice/herb mixes. These can be easily frozen for a quick addition to any meal. And by making them yourself, you will be avoiding the hydrogenated oils sometimes present in packaged varieties.

Yields: 3 servings (~3 cups)

 

Ingredients

2 potatoes

mushrooms (optional)

Spice Option:

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp paprika

1 tsp chili powder

Herb Option:

1/2 tsp dried basil

1/2 tsp dried thyme

1/2 tsp dried rosemary

1/2 tsp dried parsley

 

Instructions

1. Cook potatoes in microwave for 10-15 minutes. (This step prevents them from puffing and being hollow once baked.)

2. Cut potatoes into cubes. Coat with either spice mixture or herb mixture.

3. Bake at 450 degrees for 20-30 minutes.
