Qunioa with Hazelnuts, Apples, and Dried Cranberries

Fresh fruit brightens up this quinoa.

Servings: 1.5-2 servings

 

Ingredients

1 cup cooked quinoa

1/4 cup onion

1/4 cup celery

1/4 cup hazelnuts (I used almonds)

1/4 cup green onion

1/2 apple (I used 1/2 cup)

2 tbsp cranberries (I used raisins)

salt, pepper

 

Instructions

1. Saute onion and celery.

2. Toss ingredients together. All flavors to meld fro 20 minutes. Enjoy!
