Authentic Hummus

This hummus is delicious and creamy.

Yield: approximately 11 tbsp and 11 oz

 

Ingredients

1/2 cup dry chickpeas (or 1 cup cooked and peeled)

2.67-5.33 tbsp tahini

juice from 1/2 lemon (or approximately 1.5-2 tbsp)

6 tbsp or so cooking liquid (or 3+ ice cubes)

1 clove garlic (optional--does not add a strong taste)

1/2 tsp kosher salt (do not omit)

1.5-2 tsp cumin

1.5 tsp plus 3/16 tsp baking soda

 

Instructions

1. Wash chickpeas until water is clear.

2. Soak chickpeas overnight with 1.5 tsp baking soda.

3. Wash chickpeas again. Soak in water for a few more hours.

4. Transfer chickpeas to a pot. Cover with water and add the rest of the baking soda.

5. Cook 1-1.5 hours or until easily smashed between two fingers, switching water part-way through. Remove peel from chickpeas.

6. Process ingredients together
