Italian Hazelnut Cookies

These cookies are rich tasting.

Yield: 32 small cookies

 

Ingredients

2 cups toasted hazelnuts

1.25 cups dates

4 egg whites

1/2 tsp salt

1 tsp vanilla

 

Instructions

1. Toast hazelnuts at 350 degrees for 7-9 minutes. Remove skins.

2. Pulse nuts. Add dates.

3. Beat egg whites and salt to stiff peaks. Fold into nut mixture. Add vanilla.

4. Bake 25-30 minutes at 325 degrees.

Notes: They look like they are done after 15 minutes, but keep on cooking them because they will be mushy inside.
