Kale Chips

You will love these crispy chips. The nacho variety is my favorite--they are reminiscent of cheetos.

Measurement Notes

No more than 2 cups of greens will fit in the dehydrator

1 tbsp dressing per 1/2 cup leafy greens

Sour Cream and Onion Kale Chips Ingredients (No to this flavor)

1.5-2 bunches kale (~13-18 stems)

1.5 cups cashews, soaked for a few hours

4 tbsp lemon juice

1.5 tbsp apple cider vinegar

1/4 tsp sea salt 

1 small red onion, sliced thinly

1/4-1/2 cup water

Optional Spices to Add (from Other Recipes):

1-2 tbsp onion powder (if not using fresh onion)

1-2 tsp dried chives

1/2 tsp dried parsley

1/4-1/2 tsp garlic powder

1/4 tsp dried dill

Optional Fresh Ingredients to Add (from Other Recipes):

1/2 cup green onions, blended

Nacho Kale Chips Ingredients (Yes to this flavor)

1 bunch kale (~9 stems)

1 cup cashews, soaked for a few hours

1 red pepper

2 tbsp lemon juice (maybe a tad less)

1/2 cup nutritional yeast (might not need all of it. I tested recipe with only half this amount and it still tasted good.)

1/2 tsp garlic

1/2 tsp salt

1/2 tsp chili powder (opt)

 

Paprika-Lime CheesyChard Chips (Yes to this flavor although very lemony. Maybe try a tad less lime juice next time)

1 bunch chard (~8 homegrown leaves)

1.4 tbsp olive oil

1/2 tsp sea salt

1.5 tbsp lime juice

1 tbsp paprika

2 tbsp nutritional yeast

 

Pizza Kale Chips Ingredients

~8 stems kale

1/2 cup cashews, soaked

4-8 tbsp water

1/4 cup tomato paste

1 tbsp nutritional yeast

1/2 tsp oregano

1/2 tsp marjoram (I omitted this)

1/2 tsp garlic powder

1/2 tsp onion mowder

1/2 tsp basil

1/4 tsp rosemary

1/4 tsp salt

1/8 tsp red pepper flakes

 

BBQ Kale Chips Ingredients

1 small bunch kale (~6-9 stems)

1/2 red bell pepper

2 roma tomatoes, roasted 40-50 minutes at 350 degrees

1 onion, roasted 40-50 minutes at 350 degrees

3 cloves garlic (or 3/8 tsp garlic powder)

2 tsp paprika

1/2 tsp chili powder

1 tsp sea salt

 

Apple Pie Kale Chips Ingredients

1 head kale (~9 stems)

1/2 cup raw walnuts or cashews

1 apple

1 tsp cinnamon

3 dates

1/8 tsp nutmeg

1/8 tsp vanilla extract

1/2 tsp lemon juice

1/2 cup water

 

Instructions

1. Wash kale, cut off tough stem, and cut into bite-size pieces.

2. Blend all ingredients except kale.

3. Mix with kale.

4. Dehydrate at 115 degrees for 6-8 hours.
