Kale with White Beans and Sundried Tomatoes

Try this take on kale.

Yield: 4-6 servings

 

Ingredients

1/4 cup celery (I omitted because I was out)

1 small onion

1/2 lb kale

1-2 roma tomato

1.5 cups cooked white beans

1/4 cup sundried tomatoes (I used ~0.84 oz)

 

Instructions

1. Saute celery and onion.

2. Add tomato and beans.

3. Add kale. Stir in sundried tomatoes

Notes: Original recipe called for 3 tbsp nutritional yeast (I omitted because I didn't like the flavor). Recipe also called for 1 tsp red pepper flakes (way too spicy) and 4 cloves garlic (not really needed).
