Key Lime Pie

This key lime pie uses avocados as its base.

Yield: 12 mini pies

 

Ingredients

Crust (I did not use)

2 cups cashews

1 cup coconut

10 tbsp dates

2 tsp vanilla

1 tbsp lime zest

2 tbsp lime juice

dash salt

Filling

4 avocados

1/2 cup lime juice

1/4 cup lime zest

32 dates

1/2 cup date water (for blending)

 

Instructions:

1. Blend crust ingredients. Press into pan.

2. Blend filling ingredients. Pour on top of crust.

3. Chill in fridge or freezer for 3 hours.

Key Lime Squares

These key lime squares taste great and are easy to prepare

Yield: 32 mini muffin tins

 

Ingredients

Filling

14 oz can coconut milk, cream only

zest of 1 lime

4 tbsp lime juice

32 dates (original recipe called for 3 tbsp honey)

 

Instructions:

1. Beat coconut cream. Add remaining filling ingredients. Beat. Freeze 2 hours. Enjoy!
