Kofta

Grated onion helps keep this lamb dish extremely tender. In the first spice variation, the lamb flavor shines through but a bit of cumin hits you at the end. In the second spice variation, mint shines through with a bit of a kick. I love the second spice variation!

Yield: ~9 kofta

 

Ingredients

1 pound 2 oz lamb, ground (I used leg of lamb)

1 onion, grated (~1/2 cup after grating)

 

Spice Variation #1

1.5 tsp paprika

1.5 tsp cumin

1 tsp cinamon

2 tbsp fresh mint

1/4 tsp salt

 

Spice Variation #2

1/2 cup fresh mint

1 tsp cumin

1 tsp coriander

1 tsp pepper (I used 1/2 tsp. Next time, can try full amount)

1 tsp paprika

1/2 tsp garlic powder

 

Instructions

1. Combine ingredients.

2. Sear 2 minutes per side

3. Finish cooking for 10 minutes at 350 degrees.
