Lemongrass Chicken Coconut Soup

The lemongrass adds great flavor to this soup.

Instructions

1 inch piece ginger

10 kaffir lime leaves or 1 tbsp lime zest and 1/4 cup lime juice

6 cups broth

1.5 pound boneless chicken thighs

8 oz mushrooms (shitake, oyster, or maitake)

1 cup full-fat coconut milk

2 tbsp fish sauce

2 stalks lemongrass

 

Instructions

1. Smass lemongrass and ginger. Cut lemongrass into 4 inch pieces. Bring lemon grass, ginger, lime, and broth to a boil. Simmer 8-10 minutes. Strain.

2. Add chicken and mushrooms. Return to boil. Simmer 15-20 minutes. Add coconut milk and fish sauce.
